One loafPrep 20 minBake 55 min at 175 °C
Ingredients
- 150 g butter
- 150 g light brown sugar
- 2 eggs
- 200 g plain flour
- 1½ tsp baking powder
- 1 tsp cinnamon
- Pinch of salt
- 100 ml milk
- 2 apples, peeled and diced
Method
- Melt the butter in a small pan and keep cooking until it smells nutty and the solids turn brown. Cool for 10 minutes.
- Heat the oven to 175 °C and line a loaf tin. Whisk the sugar into the butter, then the eggs one by one.
- Fold in flour, baking powder, cinnamon and salt, alternating with the milk.
- Stir in the apples, pour into the tin and bake for 50–55 minutes until a skewer comes out clean.
- Leave in the tin for 15 minutes, then cool on a rack.
Notes
Pears work just as well. The cake stays moist for three days wrapped in paper.
